Lazy Girl Quiche
This recipe is an abomination, I’ll admit that. But it’s also… kind of incredible? I introduced it on social media as “An Idiot’s Quiche” but after several followers replied that it sounded kind of genius, I’ve switched to “lazy” instead.
This is a perfect recipe for two hearty servings of a quiche-like breakfast that can be on your table in under an hour using ingredients that are probably lurking in the back of your refrigerator. It’s flexible - use whatever seasonings, fillings, or cheese you want - and falls firmly into my favorite recipe category: “this is better than it has any right to be.”
Instead of fussing with crust, we use a large flour tortilla pressed into a 6” cake pan, filled with a cottage cheese and egg mixture and whatever veggies and cheeses need to be evacuated from your refrigerator or freezer.
Lifted out of the pan and cut in half, it makes for a lovely breakfast for 2.
I highly recommend a drizzle of your favorite hot sauce
Lazy Girl Quiche
INGREDIENTS
1 large flour tortilla
3 eggs
½ cup full fat cottage cheese
seasonings to taste (see note 1)
½ cup fillings of choice (see note 2)
½ cup shredded cheese of choice
DIRECTIONS:
Preheat your oven to 375ºF. Press the tortilla into a 6” cake pan or similarly-sized dish. It should come up the sides to create a cup.
Add eggs, cottage cheese, ½ tsp of salt, and whatever seasonings you prefer (note 1) to a blender, food processor, or immersion blender cup and blend until smooth.
Carefully pour this mixture into the prepared dish, making sure not to let it spill over the sides of the tortilla. Sprinkle your filling of choice (note 2) into the pan, trying to evenly distribute.
Top with shredded cheese and bake for 30-40 minutes. It should be puffy, golden, and fully set, but the exact time will depend on your fillings and oven. Let it sit for 5 minutes before removing from the pan and cutting it.
NOTES:
Use whatever seasonings or dried herbs you like here. I used ½ teaspoon each of pepper, garlic powder, and adobo blend for a southwestern flavor
Many fillings would be good. I used fresh corn, sundried tomatoes, and capers. Other ideas: a small handful of chopped spinach, sauteed mushrooms, diced peppers or onions, cooked bacon/sausage, or anything else you might like in a quiche or fritatta. Beware of moisture content: anything that gives up a lot of moisture when cooking may affect the texture.
